Veal Rolls
Description:
This is a very easy and delicious polish recipe called "Zrazy"

Ingredients:

500g Beef or Veal schnitzel (lean and large pieces) See NOTES.
1 bacon strip (sliced in to medium strips)
4 onions (1 shredded, 3 sliced)
2 slices of bred, cut in to 1cm thick strips.
4 button mushrooms (1 diced, 3 sliced)
salt and black pepper
3 cups of water
1 tbsp of flour
100g margarine or butter
2 pickled cucumbers cut in to 5cm long strips (optional)

NOTES:

Beef can be purchased in one piece (must have large circumference, at least the size of an
open hand), cut in to 1cm thick slices and beat.

At least 2 rolls per person.


Directions:
  1. Lay out veal slices and place shredded onion, diced mushroom, bacon strips, bread and cucumber over the top. Sprinkle with salt and pepper.

  2. Roll the meat in to tubes and pin with bamboo skewers.

  3. Heat margarine in the pressure cooker. Place veal rolls and brown on all sides.

  4. Add 2 cups of water sliced onion and mushrooms. Cook for 45 min checking half way through if more water is needed. Add salt and pepper to taste. When done remove rolls and place aside.

  5. To make the sauce mix 1/2 cup of water with flour and pour in to the pressure cooker.

  6. Bring to boil stirring.

  7. Serve rolls with mashed potato.
