Tiramisu

Description:
Tiramisu means "pick me up" in Italian and this easy dessert laced with coffee and liqueur is sure to do just that. This is the ideal recipe for entertaining, as it can be prepared well in advance.

Ingredients:

2 tbs instant coffee powder
2 1/2 cups of warm water
1/2 cup of sweet marsala wine or Tia Maria or Kahlua mixed with below vodka
1/4 cup of vodka
2 x 250g packet sponge finger biscuits (smaller yellow packets)
500ml thickened cream
1 cup icing sugar mixture
2 cups mascapone cheese
50g dark chocolate, grated

Directions:

Dissolve coffee powder in water in a medium bowl.
Stir in half the alcohol mixture.
Dip half the biscuits one at a time in to coffee mixture, arrange in a single layer over the base of a serving dish (10 cup capacity)
Beat the cream and icing sugar mixture with an electric mixer until soft peaks form.
fold in the mascapone and remaining alcohol mixture.
Spread half the cream mixture over biscuit layer in the dish.
Repeat for second layer of biscuits and cream.
Sprinkle with chocolate and refrigerate for at least 6 hours or overnight.
