Cabbage Rolls - Polish Galapki

Yet another one of my favorite Polish dishes :o)

Ingredients:

The Rice:
1 cup of rice
1.5 cups of water
Pinch of salt

Other:
1 large cabbage
2 x 400g cans of crushed tomatoes
4tbs tomato paste
2-3 tbs of butter or margarine

The filling:
500g pork mince
2-3 cloves of garlic (crushed) or 3 tsp of jar garlic
salt and pepper (fair bit)

The Sauce:
1 tbs of plain flour
1 cup of water
Directions:
  1. Cook rice in rice cooker.

  2. Cut the core of cabbage out and spread it apart a little

  3. Place in microwave for 5 min

  4. Remove soft leafs and put aside

  5. Repeat steps 2 to 4 till no more leafs are left. Smallest leafs from center will not be needed.

  6. Select 3-5 biggest (green) leafs to be used as layer separators in the pressure cooker.

  7. If the leafs are still too hard you can place them in microwave for 2 min more.

  8. Cut remaining leafs in two by cutting away middle stem (for large cabbage or single leaf for medium).

  9. Place all filling ingredients and cooked rice in a large bowl and mix well using your hands. Best part ;)

  10. Melt butter or margarine in pressure cooker and place 1 bigger leaf at the bottom.

  11. Place 1 tbsp of filling on to a leaf and roll up. Place roll in pressure cooker.

  12. For every level add salt and pepper to taste, 1tbs of tomato paste, cover with half can of crushed tomatoes and a big leaf. Add water to just cover the rolls.

  13. Repeat until pressure cooker is ¾ full.

  14. Cook for about 1 hour on a low flame (it will come to pressure on low flame) checking once every 30 min to make sure they are not getting burned. Add water if needed.

  15. Once cooked, gently remove and place aside.

  16. Mix flour and water and add to the pressure cooker sauce. Bring to boil and use to cover rolls when served.
