Polish Zapiekanka: Toasted Baguette

Description:
Crusty, freshly-baked bread, covered with an array of toppings, under a divine coat of melted cheese… Oven baked, without any microwave in sight… who would be able to resist?

NOTES:
You can add as many toppings as you like. I enjoy it with ham and some black olives.

Ingredients:

1 baguette
10 oz (300g) button mushrooms (chop into small pieces)
1 small onion (diced into small pieces)
5 oz (150g) diced bacon
5 oz (150g) mild cheese grated (e.g. gouda or mozzarella)
1 tbsp canola oil (for frying)
salt and pepper
tomato ketchup for topping
Directions:
Preheat the oven to 400°F (200°C).
Cut the baguette lengthwise. Scoop it out a bit.
Add oil to the frying pan. Sautée the chopped onion, mushrooms and bacon for 7-10 minutes. Season with salt and pepper.
Fill the baguettes with fried components. Cover with grated cheese.
Bake until golden (approx.8-10 minutes).
Serve with ketchup.
