Cut the pumpkin in to 2cm squares.
In a large pot put all the ingredients (except pumpkin pieces) and bring to boil.
Add pumpkin and simmer for 15min.
Put pumpkin in jars and cover with liquid.
It will seal, no need for below process.
Pasteurize for 10min and let cool down.
Pasteurization Process below:
In a large pot, put jars in on a tea towel and cover with water up to 3/4 mark.
Bring water to boil and simmer for 10min.
Remove jars and let cool down upside down.
